Blanch the celery root in boiling salted
water with a little lemon juice added. Cook for 15 minutes --- it
must not overcook. Peel the apples, core them and dice them.
Place them in a bowl and add lemon juice. Cut the bananas in slices,
add to the apples and sprinkle with more lemon juice. Peel
the oranges, including all the pith and section them. Put aside.
Place the lettuce in a salad bowl, with the apples, bananas, celery root,
and orange sections. Serve with a mayonnaise lightened with some
lemon juice and flavored with Tabasco.
